And just like that, it’s going to be April. Aside from being eyeballs deep in allergy season I’m really looking forward to warmer weather, more colourful and local produce being available, and spending some time off grid later this month. What are your favourite spring things?

Next week’s menu is inspired by ALL the spring produce that’s making its way into the farmer’s markets locally. I love that we live in a part of the country that has such a long growing season and I’m contemplating my own garden for the year. If anyone is an avid gardener, I’ll take any tips! I was a bit discouraged last summer as some local visitors (of the 4 legged variety) scooped up a lot of our harvest…

White Bean & Spring Veggie Stew
Lima bean, onion, celery, shiitake mushroom, parsley, garlic, radish, asparagus, peas, Flourist sourdough baguette, lemon wedges

Buckwheat & Tofu Larb
A twist on a Thai classic. Buckwheat groats, organic tofu, thai chillies, garlic, mint, cilantro, roasted peanuts, endive leaves, watermelon radish, lime.

Freekeh Falafel
Freekeh, Florist chickpeas, cilantro, parsley, red onion, hummus, cucumber, tomato, roasted cauliflower, spicy creamy green sauce, spelt pita bread

Spring Barley Risotto

Pearl barley, spring onion, asparagus, lemon zest, parsley. Choice of protein (chicken or roasted chickpeas)

Quinoa-Coconut Power Cookies
Flourist golden quinoa, coconut butter, maple syrup, sprouted walnuts, sour cherries
